Breakfast Muesli & Apple Compote

I’m 100% breakfast person, I would love to prepare nice big breakfast every day but I have to leave my house at 7am most of the week so there is no time for anything complicated. I usually eat bowl of muesli or granola with plan based milk or yogurt and some fruit. I would like to share some homemade muesli and stewed fruit inspiration with you, it’s super easy to make, you can adjust it as you like, make a big batch and your breakfast is sorted for a while.

I personally like this muesli so much, it’s delicious and full of good ingredients. You can use any nuts, seeds and dry fruit you like, I usually use almonds, sunflower seeds and raisins. I love the smell and taste of cinnamon in this recipe so I add quiet a lot of it but feel free to start with less and eventually add some more .


Ingredients :


2 cups of oats

1 cup of nuts

1/2 cup of seeds

1/4 cup of raisins/ dates/ cranberries

1/2 cup of desiccated coconut or coconut flakes ( optional)

1-2 tbl spoons of cinnamon


Put all the ingredients in a big bowl and stir it properly. Store the muesli in a jar or plastic container.


Basic Apple compote


This is a perfect topping to your porridge, muesli or pancakes and you can play around with the recipe as you like. Apples and raisins work very well as a base but you can add pears, plums or cranberries as well if you like to. The same applies with the spices, I always use cinnamon but you can add cloves, star anise or allspice if you want, it’s all up to you.


Ingredients:


2-3 apples

1/2 cup of raisins

1 tbl spoons of cinnamon


Peel the apples if you want, chop them into small cubes and add with rest of the ingredients into a pot. Add about 1/2 cup of water, cover the pot and simmer on a low heat until the apples are soft, it should take about 20 minutes. You can serve it warm or leave it to cool down and store it in container in a fringe.

If using cloves or star anise don’t forget to remove it once the compote is done.
